Maine lobster bisque with seared bay scallops scented with lemongrass.
Sautéed Maine diver scallops over buttered young leeks in a yellow tomato coulis scented with opal basil.
Vegetable risotto with wild mushrooms, sunchokes, purple carrots and pencil asparagus with parmesan and garden herbs.
Panaché of young lettuces with Tennessee goat cheese and candied pecans
in a sherry vinegar and hazelnut dressing.
Pan seared rabbit tenderloin over a wild mushroom orzo pasta tossed with
baby arugula in a pistachio and garden chive jus.

Sautéed Scamp grouper over Carolina shrimp risotto scented with pesto and pear tomatoes.
Roasted Amish chicken breast over stone ground Tennessee grits scented with roasted garlic in a pear tomato, caper and lemon-thyme jus.
Long Island duck confit over a white sweet potato and lavender-honey mousseline in a port and sun-dried cherry glaze.
Hickory grilled beef tenderloin over a wild mushroom, sunchoke and Vidalia onion ragout in a burgundy reduction with smoked bacon and garden rosemary.

Sing For Your Supper with Bob Waggoner
“Sing For Your Supper with Bob Waggoner™” is an interactive cooking series and webcast combining America’s love affair with food and music. “Sing For Your Supper,” which is the first culinary series to film on the historic stage of the Ryman Auditorium, is hosted by Chef Bob Waggoner (Executive Chef of The Watermark Restaurant in the Gulch area of Nashville TN) and produced by Mike Kirk. The series is being produced in cooperation with WETA Washington, DC and will be aired on (PBS) affiliates around the nation beginning in the Fall of 2013. Adding to the excitement of the show, a 60-person audience will be seated on the Ryman stage. In preparation for the taping, the audience will be entertained by narrator Marcia Campbell from 650AM WSM and our “House Band” with legendary musicians Chris Scruggs, Kenny Vaughan, Buddy Spicher, Ernie Sykes and Billy Robinson.
Each episode will feature a music star and their special guest along with a sommelier, and the episode’s guest chef, chosen from our studio audience. Chef Waggoner will teach his Audience Chef how to prepare a French-influenced, Southern entrée while also discussing wine pairings. Then the Audience Chef will present their dish to the musical guest, who will gladly “sing for their supper.”
Following the television broadcast recording, Chef Waggoner hosts, “Waggoner’s Uncorked and Unplugged.” This 15-minute webisode will feature an exclusive chat with the music artist and their guest sitting around the Chef’s table discussing food, travel, music, tours, and exclusive stories.
ABC’s new show Nashville airs every Wednesday at 10pm/9 central.
